ChocoNut Baked Oatmeal!

Happy Wednesday everyone! I started my morning with 1/2 a Clif ZBar and a cardio workout – 40 minutes on the elliptical and 10 minutes of ab work. I couldn’t wait to get home and eat breakfast though. Here’s why:

I decided to try out my skills at baked oatmeal last night! It was so easy! I could let my breakfast bake while I finished editing that group paper 👿

I’m calling my version ChocoNut Baked Oatmeal. Here is the recipe for two servings:

  • 1 1/4 cup oats
  • 1 cup unsweetened vanilla almond milk
  • 1/2 cup unsweetened chocolate almond milk
  • 1/3 cup egg whites
  • 1 tsp. vanilla
  • 2 tbsp. brown sugar (to be sprinkled over the top later)

Grease a baking dish with cooking spray and add the oats. Mix the almond milk, egg whites and vanilla. Pour over oats and stir until mixture is consistent throughout. Bake at 350* for 45 minutes – the baked oatmeal will be hard on top but soft on the inside. Sprinkle brown sugar on top and turn oven to broil. Bake for another 3 minutes. Makes 4 servings that are roughly 160 calories each.

Here’s my double serving for breakfast this morning (I split it into two pieces):

Nice and big! I added 1/2 tbsp. of peanut butter to the top of mine – hence the title ChocoNut to encompass both the peanut and the “chocolate almond” from the milk!

I enjoyed every single bite. Next time I may try it with banana, but I’m quite pleased with this result :mrgreen:

Lunch

I’m meeting Bobby (my boyfriend) for lunch on campus today before I go to a study required for one of my classes – I’m basically one of the test subjects and have to fill out a bunch of surveys. They actually offer money for students to do them voluntarily (which I take advantage of sometimes), but this one is just part of a class 🙁

I packed a PB + Banana Muffin and a juicy red pear.

I also have a Banana Walnut Gnu Bar to snack on at NNN.

It’s going to be another busy Wednesday – I hope it’s a good one for all 🙂
