Jenny-oats

I think I’ve got the camera situation figured out – I’m keeping my fingers crossed! Unfortunately I lost all the step-by-step photos, but I’m sure I will make the Banana Oat Bars again, so there’s always next time! I took a picture of a plain one this morning:

If you look closely you can see some of the banana marshmallows. The cinnamon sprinkled over the top is my favorite part πŸ™‚

Moving along…HAPPY FRIDAY! I love Fridays – I worked out my schedule this quarter so I have no classes on this lovely day! Have I mentioned that I’m on the quarter schedule yet? Oh yes. That means we have three terms instead of two, which means an extra dose of tests! So while everyone else is finishing up in the next few weeks…I have my first midterm of the quarter this Tuesday! We don’t get out until the middle of June this year because we started school the last week of September. I love the fact that we get an extended summer but it’s always a bummer at the end of the school year when it just starts getting warm and everyone else is finishing up!

I woke up early this morning and grabbed 1/2 a Clif ZBar before heading to the gym – 40 minutes on the elliptical and a modified leg workout. No squats, just lunges today – I wasn’t feeling as ambitious πŸ˜‰

I picked Bobby up on the way back because he needed the car to pick up his parents from the airport (they’re coming to visit this weekend). He asked if I would make him oatmeal because he’s never really had any that isn’t “instant” and always thinks what I make looks so good – how could I pass up the chance to show him what real oatmeal tastes like?!

I think making a bigger batch made it easier to use less liquid – today’s consistency was perfect! I used 1/2 water, 1/4 unsweetened vanilla almond milk and 1/4 unsweetened chocolate almond milk…plus a whole whipped banana, flax, wheat germ and maple syrup! Nothing out of the ordinary, but with my spoonful of PB it was a delightful “oats for two” breakfast πŸ™‚

Bobby decided they should be called Jenny-oats. Haha – It reminded me of the “Jennie-O” turkeys they have at Thanksgiving!

After breakfast I relaxed with a Coffee Cocoa.

Even without classes my schedule still manages to be packed – I’m going to lunch with Bobby and his parents (probably to Panera!) and then I have to work. I have a job running the video for the graduate school’s Friday newscasts – it’s easy for me because of NNN and bonus: I get paid  After work I get to see my dad! He’s flying home from a work trip and is making a pit stop in Chicago to see me πŸ™‚ We’re going to drive to my grandparent’s house for dinner – I’m so excited!

I hope everyone has a wonderful Friday! It’s by far the best day of the week as far as I’m concerned πŸ™‚

Oh.My.Goodness. I neeeeeeeeeed to try that! 1/4 cup Unsweetened Vanilla AND Chocolate Almond Milk?! I have a container of the chocolate almond milk but I have yet to try it, so I’m definitely up for it!

  3. I like “Jenny-Oats” too.. hahah I always make up names for the concoctions I come up with especially the shakes. Plum drop smoothie? SO lame πŸ˜€

Friday was my no-class day last semester.. this semester it’s Mondays. Either way, a three day weekend is always nice.

Do you guys have Noodles in Chicago? I’m guessing you’ve been there at home.. it’s pretty much my favorite place ever!

  4. Erika,

YES we do have Noodles – thank goodness πŸ™‚ I used to eat there all the time at home! And I like your plum drop smoothie idea!

  5. Wha? What is Noodles? We have Noodles and Co. if it’s the same thing.

I love the Jennie-Oats; I’d eat that over Jennie-O’s ANY day!

  6. Jill – Yeah, it’s Noodles and Co. πŸ˜‰

I’m glad everyone likes the Jenny-Oats name. I guess I’ll add it to my list with Coffee Cocoa!
