Cinco de Mayo was…

GREAT! But busy. Some good news to report (for those interested):

1) I received an official offer letter from the PR firm I’ll be working at this summer!

2) Our newscast was full of great content and had very few flaws!

3) There really isn’t a third…but I always feel there should be at least three points!

I am super duper tired (must be if I just typed super duper), so I will post some of my most interesting eatin’ of the day with minimal description.

Breakfast was a ‘Pump’ It Up muffin with peanut butter and a Very Berry smoothie with vanilla yogurt instead of orange juice – made for a much creamier version!

Lunch consisted of a sandwich with guacamole (can’t get enough!), deli turkey, and spinach. Plus a 90-calorie pack of pumpkin seeds I found at the grocery store (I love pumpkin seeds and this is an easy way to separate them out!), and some yummy vanilla meringue cookies.

And dinner after the show was an outrageously large and dependably tasty pita from Pita Pete’s – I got mine with chicken, green pepper, tomato, spinach, romaine, black olives, corn, mushrooms and cucumber with some honey mustard.

Monstrous!

Oh so good.

Looking forward to a more laid-back Tuesday. Although knowing my crazy schedule, something is bound to happen! I hope everyone had a great start to the week!

  1. Guac guac guac is amaaaaaaaaaaaaazing! I love the huge wrap – I get those and then eat until I’m stuffed it’s bad.
