Dreary day.

I woke up this morning to a noise outside my window. I couldn’t figure out what it was, but then I opened the blinds and saw this:

Yuck! The wind was so strong it was whipping the rain extra hard against the window. I knew right then and there that it would be oatmeal for breakfast. Nothing makes a rainy day seem less dreary 🙂

This morning I had the usual whipped banana with flax, wheat germ, and maple syrup, but with a different topping – Mountain Medley granola from Kashi that I had received as a sample in the mail.

It was really good! I think I may like granola as a topping even more than trail mix. Next time I go to the store I’m going to be on the lookout for a new one! With breakfast I also had a delicious chocolate covered strawberry!

After breakfast I went to workout at the gym. Another day of cardio – 30 minutes Stairmaster, 10 minutes stationary bike and 10 minutes elliptical. I had a lot of reading to do as I prepare for my midterm on Tuesday, so I stuck with a workout that would allow me to multi-task!

When I came back from the workout, the wind was still whipping rain every which way! But I heard that the storms were even worse in other parts of the country (tornadoes!) so I can’t complain. For lunch, I made myself a wrap using a La Tortilla Factory Garlic and Herb wrap with sliced turkey, hummus and reduced fat Mexican cheese, heated up in the microwave for roughly 30 seconds.

YUM! I also had yet another chocolate covered strawberry (so good!) and some whipped cottage cheese.

The rest of the day was spent studying, studying and…oh yeah, studying. My how I am envious of all the bloggers who are on summer break! Later in the afternoon I had to refuel so I made myself a Coffee Cocoa.

Tonight’s dinner was AMAZING! I bought some whole grain Tandoori Naan bread at the grocery store this weekend, and decided to use it as a pizza crust (got the idea from Tina’s blog). I covered the bread with barbecue sauce, fresh spinach, feta and reduced fat Mexican cheese, then put it in the broiler for about 6 minutes. It came out perfectly melted and looked just like pizza!

I cut it into slices to give it the full effect. I will definitely be making this again!

With my delicious pizza I had a red pepper drizzled with Annie’s Goddess dressing. Basically, dinner couldn’t have gotten much better!

As I continued studying, I made myself a bowl of berries. I got such a deal on them this weekend at the store – and both the strawberries and blackberries are perfectly ripe right now.

It was such a great day of food, so of course I just had to share it with all of you 😉 And I sort of see the dreary weather as a blessing in that I had to spend the whole day inside studying anyway – glad the sun and warmth weren’t a temptation 😉

    I felt the same way you did this morning about oatmeal+rain! I love granola in oats too… I have to try it w/ the Kashi mountain medley granola next 🙂

    Glad you enjoyed that Kashi granola! Definitely sounds like a fun addition to oatmeal.
