Lotsa Pasta & Mozza

It’s been a while since I’ve had pasta – I need to make it more often!! Tonight, my dad cooked up some Chicken Mozzarella for dinner – just your basic chicken breast covered with mozzarella cheese placed on top of some angel hair pasta with plenty of tomato sauce. It turned out great!! On the side, we had some steamed broccoli and corn on the cob – oh how I love corn on the cob in the summertime :mrgreen:

I ended up drizzling some Annie’s Goddess dressing on the broccoli and corn. I swear I could put that dressing on anything and be satisfied!

After dinner, I had an amazing treat – piña colada sorbet! My mom gets these from Costco – they also come in lemon, orange, and coconut flavors, and they’re served in the actual fruit that the flavor mimics. So tonight, I ate sorbet from a pineapple 🙂

I haven’t been able to find these anywhere else, but they’re pretty low in calories and taste absolutely amazing – the perfect light summer dessert! Here’s the wrapper:

Speaking of light treats…earlier this afternoon, I snacked on a bowl of fresh fruitstrawberries, green grapes, and blackberries!

I just got done watching the National Treasure sequel – I loved the first one, and this one was really good too! It’s kind of fun to pretend that some of the “treasure” actually exists! Have a good night everyone – I can’t believe tomorrow is Friday already!

  1. I would feel SO healthy after eating that bowl of fruit. Mmm! And I love the dish of the dessert. That just makes it so fun!

  2. your din looks fab as always! I have yet to have summer corn on the cob.

    I really want to try that sorbet! Too bad there isn’t a lot of incentive to go to Costco when you are just shopping/feeding for one. I have raw almonds from almost a year ago that I am still eating up! As well as Costco brand canned tuna, etc. Hmm maybe sometime though…all of a sudden I began to think about all these things I COULD stock up on…fruit, PB, oats…haha!

  3. Pina colada sorbet?! YUM. I wish we had a Costco closer to here so badly. I only get to gi there once in a blue moon when I visit my dad since he has a membership, but our closest Costco to home is too far away to justify getting a membership. If only… I’d practically live in it, I swear.
