Donkey and wheatberry “wrap” up

Happy Saturday! I got a lot of stuff done yesterday. My family had to take the car in to get it fixed, then my mom and I went and got me a new driver’s license, then we mailed some of my things to my apartment for the summer, then we took a break to enjoy a margarita and chips and salsa at the Salty Señorita, then we went to Costco, then we came home and had dinner, then we…ok, that’s enough “then we” 😉

We picked up dinner from a local family-owned pizza place called Bad Donkey. The restaurant serves pretty healthy thin crust pizzas, which my family enjoyed. I decided to get a jumbo-sized salad – the place is also known for their salads, sub sandwiches, and ice cream!

My salad had spinach, turkey, black olives, jalapeño peppers, pepperoncini, and feta. I fork dipped it in honey mustard dressing. They also put a piece of cheesy bread on the side – so doughy and good!

Now onto this morning 🙂 I woke up early and went to the gym with my dad – got in a good 40 minutes on the elliptical machine plus some ab work. I came back and made myself the obligatory mug of Coffee Cocoa.

I had the usual oats for breakfast. Today I used a packet of Quaker Raisins & Spice instant oatmeal. I really liked this one – it’s even better than the banana bread flavor!

I made this oatmeal with 2/3 cup unsweetened vanilla almond milk.

Golf went well today! No sunscreen issues this time 😉 I love being outside for 4 hours straight – it’s such a great way to ensure that I make the most of summer :mrgreen:

After our round, we had lunch. The star of the meal? WHEATBERRY SALAD!!!

My mom and I found this salad at Costco yesterday – I bet you can guess how excited I was to share it on the blog! It came with wheatberries, apricots, cherries, pineapple and slivered almonds. My dad added green grapes, blueberries and raspberries to make it even more colorful for the blog 😉 The verdict? It was really good!! The cherries made it tart but the rest of the fruit made it sweet, and the wheatberries had so much chew! I can’t wait to make them back in Chicago and add them to my oatmeal!

Along with the colorful salad we had some chicken lettuce wraps.

Another great find from Costco! They taste just as good as the one’s from P.F. Chang’s and are so easy to make! All you have to do is microwave the chicken and serve it with everything else!! I made three small lettuce wraps. Here’s a close-up:

I’ve had such a great time at home! I also found out today that I got an A in one of the classes with the 20-page group paper – blech! But it was such a relief to know that all the hard work paid off, and I was really excited, so I just had to share 🙂

Tonight we are going out to dinner to celebrate my brother’s birthday early! I’ve also got a few more errands to run this afternoon – including getting the birthday and Father’s Day cards! Can you say procrastinator?

  5. I love days packed full of running around and errands, as long as they are fun ones of course. And a trip to Costco is ALWAYS fun.

    I LOVE all the colours in that wheat berry salad. I’m so happy that I have wheat berries all prepared and sitting in my fridge right now! I think I am going to look for some good wheat berry salad recipes asap.

    I also really want those chicken wraps. The chicken looks soooo tasty. Especially wrapped in lettuce. Guilt free! Hah yummm.
