Catching up

This weekend has flown by – I can’t believe it’s almost time for dinner already! I’ve gotten a few much needed chores done and have managed to squeeze in a little fun as well, but Monday is just around the corner!

For dinner last night, Bobby and I made omelettes.

I finally got mine to close somewhat effectively, hurray! I added spinach, red pepper, goat cheese and feta cheese. It came out perfectly, in my humble opinion 😉

I slept in super late this morning, which of course gave me mixed feelings because although I was well rested, I lost a huge chunk of my day!

I was very excited for my morning mug of Coffee Cocoa! Here’s why:

I finally got up the courage to try Alternative Coffee Cocoa with Silk French Vanilla creamer and Soyatoo!

I’ve gotta say, I really couldn’t tell the difference – what a pleasant surprise! The best part is, I can now enjoy Coffee Cocoa without worrying about partially hydrogenated oil :mrgreen:

I also had a nice bowl of oatmeal. I combined a packet of Maple & Brown Sugar instant oatmeal with 1/4 cup old fashioned oats and 1/2 cup unsweetened vanilla almond milk.

On top, I added a new treat that I found at the grocery store this weekend:

It’s called Emerald Berry Blend. This trail mix is A.M.A.Z.I.N.G. There are chunks of dried strawberries, blueberries, and cranberries, peanuts, granola, and yogurt-covered raisins. HOLY MOLY goodness!!

I spent most of today running errands. I made it to the gym midday and did 30 minutes on the Stairmaster, 15 minutes on the stationary bike, and an arm machine workout. It totally hit the spot! I got back and had a Wrap-Itz wrap with some sun-dried tomato hummus:

  1. Wow, it’s so cool you can’t tell the difference between redi-whip and soyatoo! I can’t taste a difference either, but I’ve been vegan for so long that I don’t really remember what regular redi whip tastes like, so I can’t trust my opinion.
