Delicious Day!

No complaints in the food department on this terrific Thursday! I even found a new splurge that I will definitely be indulging in once a week from now until the end of the internship – as a way to say “it’s almost Friday – you’ve worked hard, and you deserve a treat!” Yes, I also double as my own life coach 🙂

BREAKFAST

Whipped banana oatmeal makes a comeback! I combined a large whipped banana with a packet of Maple & Brown Sugar instant oatmeal. Add 1/2 cup of unsweetened vanilla almond milk, microwave, and enjoy!

I topped it with a new granola!!!

Bear Naked Blueberry Walnut. This granola has dried blueberries and a hint of blueberry flavor throughout the granola pieces. DEFINITELY a winner! I ate all the blueberrybanana goodness with a spoonful of Cinnamon Raisin Swirl peanut butter. Yum!

I actually found that this version of instant oatmeal a la whipped banana – held me over almost as well as stove top oats! I think the banana adds just the right amount of extra volume!

Can’t forget the Coffee Cocoa!

MORNING SNACK

I was completely back in my element today. This picture explains it all.

Remember how the Luna mini bar was less than half the size of my pen? Well, in order to be fair, I had to show you the Clif Chocolate Brownie ZBar to compare:

LUNCH

I decided it was time to use up the rest of my gift card from my birthday, so I went to lunch at Cosi. I got my usual Bombay Chicken Salad with the reduced fat ginger soy dressing.

Of course I enjoyed the salad with the Etruscan whole grain bread – my favorite!!

AFTERNOON SPLURGE

I took a walk around 3:30 this afternoon to get some fresh air and exercise. On my walk, I passed Fannie May Candies and a certain little something caught my eye.

Dark chocolate-covered strawberries! Wow, SO GOOD! They are a bit pricey, but I think I will splurge once a week as a sort of big city treat 🙂

DINNER

I wasn’t in the mood to be too creative with dinner tonight, so I kept it simple. I started out with a spinach salad with mushrooms, a scoop of sun dried tomato hummus, and Annie’s Woodstock dressing.

I also microwaved some Egg Beaters (the regular kind) and topped it with some goat cheese. The picture looks a little funny, I will admit – but if you like/eat eggs, it tastes really good!

I finished the night with a workout, and of course some Jeopardy 🙂

    I also really want that salad of yours.
    And I was definitely thinking of doing up some egg beaters for dinner. Yours look good so that’s pushing me more towards following up with that plan.

  3. Can’t go wrong with chocolate covered strawberries! They may be pricey, but they’re so good, and way healthier than they taste. They are one of my favorite things.
