The “Keys” to a good day.

Hello and happy Tuesday everyone! I had a good one – here are some of the “keys”…

1) I had good food (well of course this is #1!)

2) I had a good, productive day at work.

3) And the third “key” to my good day is…

I SAW ALICIA KEYS IN CONCERT!

But more on that one later 😉 First things first – the food!

BREAKFAST

I gave the Cerealoatmix another try this morning! I used the last of my instant oatmeal packets (I stopped buying it in hopes that it would inspire me to wake up early enough to make stove-top oats when I want oatmeal – gulp!) combined with 1/2 cup of unsweetened vanilla almond milk in the microwave for about 1.5 minutes. I took it out of the microwave and found, to my surprise, that the almond milk was having some trouble cooking the oats all by itself. Sometimes when this happens and it seems as though the oatmeal is becoming too runny, I’ll add in my flax and wheat germ to give it a thicker consistency, which works well. Today I decided to go ahead and add in the TJ’s High Fiber O’s to thicken it up. I then stuck it back into the microwave for another 30 seconds.

The result? The cereal was slighty softer, but still crunchy – in other words, perfect! Of course, I added the Nutz Over Raspberries and Chocolate trail mix on top, and a spoonful of Cinnamon Raisin Swirl peanut butter to enjoy with every bite! Unfortunately, when it came time to photograph, I realized my camera battery needed to be re-charged 🙁 The good news is, I charged it up for the rest of the day! The bad news is, I’ve got to use a “stock” photo from yesterday for today’s breakfast. I’m all about the pictures, so I figured it would be the best option – here it is again!

I did manage to nab a picture of my Coffee Cocoa after my camera had charged for a few minutes 🙂

MORNING SNACK

I was given a lot of work to do this morning, which kept my mind busy – making the morning go by a lot faster! I pulled out some David Pumpkin Seeds around 10:45 when my stomach finally started growling louder than my “work thoughts” 😉

LUNCH

I took a break to get some fresh air and take in some warm sunshine while deciding what I wanted for lunch. I ran out of time to pack myself something, so it was time to get creative. I figured I would pass something, get a craving, and go for it. Eventually I decided I couldn’t pass up the joy that is the $5 foot long from Subway. I know, I know – you’ve seen it before. But you know you want to see this again:

Ahh…freshly baked honey oat bread with veggies. Fluffy, doughy, flavorful…FOOT LONG! Ladies and gentlemen, this is not just the bread basket – it’s more like the bread basin or extra large bread Tupperware container or something. Anyway, it’s massively delicious 🙂

My sandwich included lettuce, black olives, green peppers, banana peppers, pickles, and honey mustard. I had half of it and saved the other for later!

DINNER

I knew I didn’t need an afternoon snack because I was going straight from the office to meet up with my mom. She brought me dinner in the form of – why, yes – another sandwich! This time from Cosi – the seasonal Pasilla Lime Shrimp.

This was my first time trying out this sandwich. If you have a Cosi nearby, you should definitely check it out! The delicious Etruscan whole grain bread is filled with guacamole(!), tomatoes, and freshly grilled shrimp. I usually have a go-to salad when I go to Cosi, but this sandwich was so light and fresh that it was too good to pass up!

So I’ve been eating out a lot so far this week and probably will continue to do so for dinners based on what my mom and I have planned. I’ve decided to make sure to pack my lunch as much as possible for the rest of the week, in order to cut down on cost and to make sure the majority of my meals are homemade. Luckily, I’ve got all of you to keep me motivated!

I leave you with a picture from the Alicia Keys concert! My mom and I went to see her last night because we are both huge fans! She is so talented in many ways – I am usually not quite so moved by a concert, but I will admit to you that I actually cried during one of her songs.

    exciting day! im glad you had a good time! sounds weird, but i like having really busy stressful days at work cause then when i go home i can just sit and do nothing and love every minute of it. being productive is one of my favorite things to be

  6. I love the $5 footlongs from subway but i never can eat more than 6″ and no one is ever there to finish the other half and it always gets soggy 🙁

    I’m jealous you got to go to that concert- I’m trying to twist someone’s arm to go with me to the American Idol concert come late august. Get to see my Jason Castro, baby!

  9. Ah! Wasn’t the concert amazing though?! My sister bought me tickets for my birthday and we went in Chicago. It was hands down, one of the best –if not THE best — concerts I have ever been to! I’m glad you enjoyed it as much as we did!
