Don’t worry, it’s not Christmas!

I was glad to see a few of you enjoyed the confusing title of my last post 😉 I’m not sure why I was in the Christmas spirit at that moment – but those songs are fun all year long!

Is the long weekend over already? Time goes by way too fast! I hope you all enjoyed the 4th of July – whether you were celebrating the holiday or not, it was still a FRIDAY after all!!

Rather than give you an exact play-by-play of each day I was gone, I thought I’d share some of the highlights – both the food and the fun!

I’ll start by showing you various breakfasts. On Thursday morning, I decided to go with cold cereal again. I combined TJ’s High Fiber O’s with Nature’s Path Puffs – my go-to combo these days!

I added a sliced banana and unsweetened vanilla almond milk, then topped the whole thing with some ground flax seed.

The rest of the day was a bit of a blur – I went out with my mentor for lunch so I couldn’t take a picture, and dinner was random snacks because my mom and I drove up to Summerfest in Milwaukee (again!) in order to see…

My mom and I are huge fans! We went to see him in concert last summer, so we thought we would carry on the tradition! Plus we were heading to Milwaukee anyway to meet up with my dad and brother for the long weekend, so it only made sense, right?

On Friday morning, breakfast had to be quick. My dad woke up early and brought us bagels from Panera. I had an asiago cheese bagel with reduced fat veggie cream cheese.

Finally, breakfast from Saturday morning was from the hotel breakfast buffet. So many tempting choices, but I decided to go with what I knew would fill me up best – oatmeal!!

I combined the oats with some maple syrup, raisins, dried cranberries, granola and pineapple! There’s also a banana hiding in the back of the picture. It didn’t taste quite as good as homemade oats, but I had it again on Sunday so obviously it was working for me!

Now, a look at lunch. Really the most interesting and full lunch I had all weekend (a lot of it was random snackage as we were moving from place to place a lot – more on that later!) was our trip to Quizno’s on the 4th of July. If you haven’t heard of it, Quizno’s is a lot like Subway, with more toasted subs. I chose the veggie sub on wheat bread.

It came with black olives, banana peppers, tomatoes, lettuce, pickles, mushrooms, red onions and GUACAMOLE!

I also had a couple of drinks from Caribou Coffee during the weekend – a Midwest version of Starbucks (even though we have those too!). I got the Northern Lite Vanilla Cooler, which has a sugar-free vanilla base, coffee, and ice. It’s definitely a cool summer treat, and since I don’t have one of these near me, I had to take advantage of it!

But perhaps the highlight of the holiday weekend/road trip/family time was the wedding I went to on Saturday! It was a beautiful ceremony for my uncle and his new wife, and a great chance to see and catch up with members of my extra big family!

Following the ceremony, we went to the reception location and had appetizers. The food pictured below represents all that was there, but I actually only ate the bread, crackers and cheese. Besides that, there was salami and chicken taquitos – pictured for your enjoyment courtesy of my mom’s plate 🙂

The dinner food was amazing! So many choices – of course I had to have some of everything!! My first plate had three different types of bread (haha, shocking right?!) – one wheat and one dinner roll and two pieces of rye bread (they are actually smaller than they look in the picture below, more like the size of a cracker) – kiwi, apples, pepperoncini, mushrooms, scallops, Caesar salad, and grape tomatoes!

The second plate had wild rice, cooked veggiescarrots, red peppers, and snap peas – and red potatoes!!

Of course, a wedding wouldn’t be complete without a beautiful one of these:

Not only was it beautiful – it was delicious! Some of the layers had a chocolate filling, while others had a berry filling. I chose the berry – and was not disappointed!!

It was a great weekend – and I’m definitely tired now! I’ve got another busy week ahead, but it should be another fun one. I’m looking forward to reading up on all the blog posts I’ve been missing out on before heading to bed – have a good one!

  1. Wow! Sounds like you had a fun weekend…and some good eats! And oh..my..gosh the asiago cheese bagel from panera is my FAV! it’s soooo good! Esp. warm!! That wedding cake is gorgeous too! and no way, i didn’t know quiznos had guac!! so getting that whenever I go next!!

  2. I LOVE Quiznos. I haven’t had it in a while. Definitely going to have to hit it up for one of those gushing guac veggie subs.

    Love the sounds of all that wedding food though, what a delicious array!

  3. That’s some yummy looking wedding food! When I got married, I took the menu planning VERY seriously. I have many family and friends with severe allergies and/or religious dietary restrictions. There were also lots of small children, vegetarians, and good, old-fashioned picky eaters in attendance, so it was quite a challenge! Luckily, we found a fantastic caterer who came up with a great buffet menu that made everyone happy and didn’t cost us a fortune. I was so proud of myself that all the most restricted eaters came up and thanked me for having so much delicious food that they could eat!

    but you look like you had a great weekend! the wedding food looks fabulous and the cake looks beautiful! i could have eaten that slice you pictured off my screen! yummy!

  8. i am so in love with panera anything… best 5k i ever ran provided panera bagels afterwards! and that is a gorgeous wedding cake…. and i don’t even like cake! (uh oh, probably shouldn’t admit that, haha.)
