“Maroon”ed in the Desert!

I just got home from the Maroon 5 concert! I saw in the comments from my earlier post that many of you are Adam Levine fans πŸ™‚ I therefore expect all of you to “swoon” here – especially you, VeggieGirl

Needless to say, it was incredible. The music was great, the singing was great and I realized that I’ve really had a summer full of concerts! It’s been so much fun – argh, and in 1.5 weeks it will all be over. Let’s try not to think about that!

BREAKFAST

After seeing Rose and Carmen try just about every possible oatmeal combination on the planet, I finally decided to try putting raspberries in my oats this morning!

I’ll try this title out for size: Chococonutrasp Oats? Ha – I’m not even sure how to pronounce that one! But here are the ingredients:

  • 1/2 cup old fashioned oats
  • 1/2 cup water
  • 1/2 cup unsweetened chocolate almond milk
  • 1/4 cup raspberries
  • 2 whole raspberries for garnish
  • 1 tbsp. sweetened coconut
  • 1 tbsp. flax

I combined the first four ingredients in the pot and cooked as normal on the stove. I stirred in the flax near the end, then added the coconut and raspberry garnish for the photo touch πŸ˜‰ It was delicious!

The raspberries kept the oats perfectly sweet – there were little pieces in every bite!

These oats kept me fueled through an intense morning workout – 60 minutes on the elliptical and about 10 minutes of ab work. I just love leaving the gym feeling completely revitalized!

LUNCH

I stayed a little too long at the gym and didn’t have time to grab lunch before we needed to head out of the house. We stopped at Einstein Bros. and Bobby and I split a chipotle turkey sandwich on a challah roll.

The sandwich was actually pretty darn amazing. It came with shaved turkey, lettuce, tomato, roasted corn and black beans, cheddar and pepper jack cheeses, plus jalapeΓ±o cream cheese.

I also skipped the chips and payed the extra buck for a fruit salad. It was pretty big and fresh with cantaloupe and honeydew melon, red grapes and pineapple.

As I was eating this, I was thinking about the article on cloning that I talked about in my last post. The article says that the cloning applies to “cattle, swine and goats,” but I was curious as to whether anyone has ever heard of it being applied to chicken or turkey. The latter makes up a much bigger part of my diet in terms of meat, so I was curious as to whether it’s possible – any thoughts?

DINNER

We spent the rest of the day racing around, picking up my brother from school and rushing back home to get ready for the concert. Our family is eternally running late, so we were running out of time for dinner options. We decided to stop at Baja Fresh on the way. I got a “naked” burrito with shrimp.

HOLY MOUND O’ CHEESE! I forgot to ask them to take it off – I always find it amazing just how much unnecessary cheese ends up piled on salads when you don’t say anything. I ended up picking off about half of it. Besides the cheese, there was shrimp, lettuce, black beans and rice. It was topped with a chipotle sauce – very yummy.

My mom also got us an order of the chips and guacamole. The guac was SO GOOD! I definitely had 10, 15, 20 chips? Ha – I just couldn’t get enough of this guac!

Then it was off to the Maroon 5 concert, where we saw more of this:

And now I am super duper sleepy! I’m going to check up on my blogs and call it a night! Again, I’ll get to the comments by the end of this week πŸ™‚ Crazy, crazy week!

    I don’t know much about cloning, so I am not sure about turkey and chicken. I bet if it will make or save money, someone will do it.

    I miss Baja Fresh. There are none in R.I. Booo.

    Not really sure about cloning either–but I guess if they can do it for all those animals you listed, it’s only a matter of time before turkey and chicken follows-if they haven’t figured it out already! I wonder if the cloned version will taste/feel the same. and have the same nutrition profile..since…y’know…different birthing methods :-p

    I feel like I use that phrase (“picture perfect”) with your blog almost too often…but I can never think of anything else to describe it better! your eats are always so pretty!!!

    and great that you tried new oats! i would try more combos, but i can’t stand to have peaches or any kind of berry in my oats for some reason…i can’t stand fruit soft like that…only apples and bananas…i’m so weird.

  7. wow, looks like such a fun day! i used to LOVE einsteins but i haven’t been there in AGES. When I was little I liked it so much more than brueggers because the bagels were bigger—now though, that might not be such a good thing: hello, portion control! Good idea getting it on challah–my very favorite bread! it brings back such good family memories for me–my grandma makes the BEST homemade challah! with raisins! yumm! but since i was so spoiled with it growing up I am VERY picky about my challah!

    Baja Fresh looks good too. I always try to ask for no cheese, or get it on the side because places like that always load it on!

    Your raspberry oats look lovely. I like your bowl as well. And as for mexican restaurants and guac- that is a major weak spot for me, I just can’t quit eating it, too darn good.

  14. that oatmeal looks AMAZING!! yum! and i remember when i first fell in love with maroon5 – drove my roommate at boarding school mad with playing the same cd everyday :p and wow, yes that is a big big portion of cheese!! scary stuff. at least you’re smart enough to cut it down πŸ™‚

  15. Your naked burrito looks 20 times better than the one I had earlier this week-totally jealous πŸ˜‰ The fruit salad looks good! Usually little shops like that tend to skimp, but it looks like they were very generous!

    The concert sounds like so much fun! What a hot picture! You sound like you are relaxed and truly enjoying your time at home!! Good for you πŸ™‚

  17. Maroon 5! That’s so awesome, it looks like a sweet concert. I haven’t been to any concerts this summer. Heck, I’ve hardly been to any concerts EVER. I really need to get on that!

    That is QUITE the mound of cheese. Unnecessary. Too bad it tastes so darn good… the “naked” burrito part looks scrumptious though!
