I Get By With a Little Help From…

MY FRIENDS :mrgreen: More on that in just a bit. First, I’d like to present last week’s Blogger Secret Ingredient as promised. I’m a little behind!

Double Duty Potato Soup

Ingredients:

  • 1 cup Imagine Red Bliss Potato Soup
  • 1 medium sweet potato
  • 1/8 cup reduced fat Mexican cheese
  • 1 tbsp. 0% Greek yogurt

Here’s what the soup looks like, for your reference!

Directions:

On the stove, heat up Imagine Red Bliss Potato Soup on medium high until it begins to boil. At the same time, cook one medium sweet potato in the microwave until soft (roughly 3-4 minutes). Cut the sweet potato into many tiny slices and add them to the pot of red potato soup. Stir the “double duty” potatoes together until the desired balance between a chunky and creamy texture is achieved. Pour into a bowl and top with Mexican cheese and Greek yogurt to create the illusion of a baked potato in soup form. Serve and enjoy!

Making Spirits Bright

It may not be Christmas yet, but there are many ways that friends around the blogosphere have been making my spirits bright these past couple of days. First of all, thank you all for your encouraging comments about the 5k and my race time! It means so much to me that you care and it further enforces how truly wonderful this community is.

My spirit was also made brighter thanks to my good friend VeggieGirl, who was kind enough to send me some INCREDIBLE gluten- and soy-free vegan goodies in the mail!

These goodies are from the Enjoy Life brand, and include chocolate chip cookies, chocolate chips and two types of granola! Of course I had to try something as soon as I opened the box :mrgreen: I went straight for the cookies!

The verdict? SO GOOD! These are very soft and chewy and remind me a lot of the Kashi TLC Cookies. But allergen-friendly πŸ™‚ Heat ’em up in the microwave and serve with a small glass of almond milk and you’ve got yourself a perfect nightcap.

Before I go, I wanted to make sure to tell you that Quantum of Solace ended up being a very good movie! We saw it on Saturday night and while I will say that you have to make sure to pay attention the entire time (aka it’s easy to miss an important plot detail), the special effects were great and I’m really digging Daniel Craig as the new Bond – it seems a bit less shallow than the other movies. A little less objectification of women is a good thing.

    I saw Quantum of Solace too and I loved it! Daniel Craig is such a good Bond! Compared to Pierce Brosnan and Timothy Dalton (sorry fans, but they were horrible!), Daniel Craig is amazing! Sean Connery and Roger Moore are really good, classic Bonds, but I really really like Daniel Craig!

    I just started eating the Enjoy Life cookies recently and I am addicted. The chocolate chip are good, but my favorites are the gingerbread and the snickerdoodle flavors.
