Congratulations to Bob Diesel

by Jenn (eating bender) on January 15, 2009

Bob Diesel = Erin’s nickname for Bobby :) She rocks.

I just have to take a minute to congratulate Bobby (for those of you who have no clue who I’m talking about, he is my boyfriend) on his NEW JOB!! It has been a long and painstaking job search for both of us. There have been a lot of uncontrollable setbacks thanks to Mr. Economy, but today, Bobby got the news he has been waiting for and accepted a position at one of his top choices! It looks like life in the Windy City is going to continue on after graduation! Now I just need to snag myself one of those job thingamajiggies…fingers crossed.

Apart from that hella exciting news, today was pretty uneventful. It was MIGHTY cold outside (at least -20* windchills), but that didn’t stop me from walking roughly 2 miles across campus (up and back) to my classes for the day. I was covered from head to toe, but I still felt a little tingly when I got back into the warmth. Before class, I had a very pleasant morning. I woke up around 7:30 and made myself a pre-yoga breakfast (yes, I did an entire yoga lesson for the FIRST TIME EVER).

I started out with a small bowl of cereal that consisted of 3/4 cup Kashi Heart to Heart, 1/4 cup unsweetened vanilla almond milk and 1/2 sliced banana.

I also had a mug of Decaf Coffee Cocoa for fuel. I’m all out of regular coffee, so I need to stock up again in order to get my morning jolt!

Once I finished breakfast, I popped in today’s P90X series workout: Yoga X. I love how all the names have an “X” at the end. It makes me feel like a body builder πŸ˜‰ But basically, it was a very intense yoga session! I did ashtanga, vinyasa, up/downward dog, warrior pose, etc. etc. for 1 hour and 30 minutes! Considering I’ve never done yoga before (except for part of the Cardio X workout on Tuesday), this was a bit intense for me. I’m not gonna lie, I had a little a lot of trouble with some of the poses. But now that I’ve at least seen and tried everything, I feel better about “the next time.”

I definitely enjoyed doing yoga first thing in the morning. The deep breathing really made me feel at ease. Now I know why it’s so popular in the blogosphere! Namaste :) Once I cleaned up, I made myself another small breakfast to get me through a grueling walk outside and 3 hours of classes.

I paused after this picture to reflect on the irony of the plate that I used. This meal was the opposite of chocolate chip cookies! It was the same as yesterday’s lunch, which included an AmyLu Sun Dried Tomato + Basil chicken sausage topped with organic ketchup

And 1/2 cup of whipped cottage cheese. I totally feel for those of you who said they can’t find this cottage cheese anywhere. I’ve only been able to find it at one Whole Foods near my school. I think we need to send a letter to the Friendship company, don’t you?

I also couldn’t help but snag 1 tbsp. of peanut butter straight from the jar! Normally I don’t take pictures of that kind of thing, but today I thought I’d mix it up for your viewing pleasure.

Then I began my frigid cold trek to class. I’m hoping that this will be the coldest week of the year because that means the end is in sight! Luckily, classes were interesting and definitely worth going to! Toward the end of my last class, my tummy started grumbling, so I pulled out a new Luna bar flavor (for me at least): Cookies ‘n Cream Delight.

I couldn’t get a picture of the bar itself because I was in class, but it’s the same color of an oreo with a layer of “creme” frosting. I have to say, I really liked it! If you can’t tell from the lack of Luna bars on this blog, I’m usually not a fan of this brand. Something just tasted “off” to me every time I bought one. But I had a coupon last weekend so I picked out a flavor I had yet to try, and I thought it was great. I’m glad I’ve found at least one that I like. I may have to give them another chance after all.

After class I went to my school’s winter career fair and talked to a couple of companies. By the time I got back, I was hungry again, but decided to make today a “mini meal” day, so I kept it small with some Kashi crackers and a part-skim mozzarella cheese stick.

And then I had another small bowl of Kashi Heart to Heart.

I was feeling a little energized for some reason and really wanted to take some time for myself out of a busy day, so I decided to go to the gym and read some of my fitness magazines, which have been piling up for weeks! I did 40 minutes on the elliptical with Women’s Health and felt glorious afterward.

I came back from the gym and had limited time before I had to be out the door again, so I continued my “mini meal” day and had dinner in parts. Part I was a container of Fage topped with 1 tsp. of maple syrup.

Then I went and ran crew for the sports newscast, which basically entails me pressing “Play” and making sure the right video runs at the right time. Once I came home, I made Part II of dinner, which included a Quorn cutlet smothered in Annie’s Smokey Maple BBQ Sauce.

Plus 2 egg whites with 1/4 cup spinach, a handful of reduced fat Mexican cheese and a massive amount of feta. I accidentally dumped the container out and most of it went piling into the bowl! It tasted extra cheesy, which wasn’t a bad thing!

And to end the evening right, I had one of my new all-time favorite desserts of rice pudding and Ghirardelli. I crumbled the chocolate a little bit to savor it even more – yum!

Random Question

Do you have any phobias?

I am eternally afraid of spiders. It doesn’t matter how big or small they are: I freak out when I see one! Over winter break, there was a medium-sized spider on our wall, and I started crying. And another time, when we were golfing, I almost stepped on a tarantula.

Typing that out just made me shiver.

1 Katie January 15, 2009 at 10:42 pm

Wow, you sure are getting your exercise in! And congrats to Bobby about his new job. That’s so exciting!

I don’t have many fears, but I do worry about what other people think of me. Hopefully I will continue to overcome this.

2 Sara January 15, 2009 at 10:55 pm

Kashi Heart to Heart = YUM! Congrats to Bobby on the new job.

I don’t think I have any phobias. I’m not a huge fan of spiders…but I wouldn’t say I have a phobia. :)

3 Olga January 15, 2009 at 11:00 pm

Yay on the new job! That’s great news.

Hmm…I don’t like spiders either…I hate gross public bathrooms. Like, I will seriously not pee for HOURS if the bathroom is in horrible condition. It just freaks/grosses me out!

and good job on the yoga!

4 carolinebee January 15, 2009 at 11:09 pm

Bob Diesel- haha why is Erin soo freakin’ hilarious! Congrats BD!! I’m totally jeal’in of the whipped CC too! I saw someone blend it themselves on a bloggy today….interesting?? I like your small snack ideas and meal parts..i get overly full if i eat a huge meal so i’ll try dividing it into “parts” maybe! πŸ˜€ And yes I will let you know when me and fortune cookie man get together…Have a great Fridayyy!

5 Hangry Pants January 15, 2009 at 11:26 pm

Congrats to Bob Deisel. You need to do some celebrating! I love your cookie plate! I’ve tried the whipped cottage cheese and did quite enjoy it. A v. healthy alternative to ricotta cheese as well. I am glad you liked yoga. Now that you know you like it, you should hit up a studio! A teacher will help you with you r alignment in the trickier poses. Stay warm!

6 Marian January 15, 2009 at 11:27 pm

Just Found your blog and I’m lovin it! Oh ya, I can’t find that whipped cottage cheese anywhere!

7 Juliet January 15, 2009 at 11:30 pm

Oh wow. I must find the whipped cottage cheese. Congrats to Bob on his new job. :)

8 Marianne January 15, 2009 at 11:36 pm

Congrats to the BF! Definitely deserves some celebration – good thing it’s the weekend tomorrow!

And 1 1/2 hours of yoga? That does sound intense, and fun! I love reading about your P90X videos.

9 sarahannmatheny January 16, 2009 at 12:04 am

First, yay Mr. Diesel.

Second, that is the way to do it girl with the fueling up all day long! I could learn a thing or two from your masterful mini meals.

Third, I am TERRIFIED of cockroaches. When I was in college (that makes me sound so OLD), our dorm had roaches the size of cats and now I freak at even the thought of them. I just shuddered, no joke. I’m going to go eat a medjool date now.

Nighty night!

10 Halie January 16, 2009 at 12:09 am

Congrats to him!

I hope you get one too!

I swear I have a phobia of vomiting. It’s true. I fear myself puking and I fear being in a situation where I might witness another person vomiting. Just typing this makes my head hurt :( I don’t know why!! I haven’t been able to get into Biggest Loser because they always show someone getting sick! It gets to a point that I don’t like putting myself in certain social situations – that and the fact I’m an introvert.

11 ttfn300 January 16, 2009 at 12:11 am

congrats to b diesel! hehe. i just tried yoga for the first time, but it was just a 20min class :) do you do alot of jumping up and down and whatnot? i am weary as I don’t want to annoy the people below me…

12 Halie January 16, 2009 at 12:12 am

I meant that being and introvert and my fear of seeing/hearing someone getting sick make me apprehensive about social situations – I don’t know if that was clear.

13 Sophia January 16, 2009 at 12:38 am

oh, cookies and cream is my fav luna bar flavor! the oatmeal raisin one is pretty good, too.
I don’t think I have any phobias…like there are some things I hate, but wouldn’t call it a phobia…hmm. maybe wasting time?

14 Jen January 16, 2009 at 5:21 am

I didnt like the cookies and cream Luna either (tried it on monday). It was only ok.

I can only find whipped cc at Fresh Market!!

Phobia….car accidents?!!?! I dont think that counts as a phobia though…they just make me nervous

15 Lara January 16, 2009 at 5:28 am

I share a similar arachnaphobis! The very thought of a tarantula makes me queasy.
Congrats to your bs on his job :)

16 glidingcalm January 16, 2009 at 5:56 am

omg soooo colddddddddd.

YAY FOR BOBBY BOO! tell him I’m proudddddd. :)

and lovin all the chicken sausage action.

17 Erica January 16, 2009 at 5:58 am

Congrats Bobby! How exciting! I hope you two do some good celebrating this weekend :)

Glad you made it through the Yoga. I really want to love Yoga but I just haven’t found a type/class that makes me want to continue taking it! I am going to give hot yoga a try.

I don’t really like Lunas either but that one is good!

Have a great day πŸ˜‰

18 Kristie Lynn January 16, 2009 at 6:04 am

Yay for Bobby (aka congrats, haha)!

My phobia is definitely needles of any kind — shots, needles for piercings, etc. I passed out when my ears were pierced (with the gun, for crying out loud) and could never take out/put in earrings; I always made my mom do it. Now I haven’t worn earrings in years because I realized how ridiculous that was. And when I had to get shots to study abroad (3… it had been a while) I Passed out with the first one, then had a mini-panic attack with the last two. Kinda frustrating because it’s not like I think they hurt, it’s just the idea of the needle piercing skin… *shudders*… I’m done now.

19 Nicole January 16, 2009 at 6:24 am

I love the cookie plate!!! So cute.

As for phobias, I am SUPER afraid of needles. I do have lots of tattoos doesn’t really make sense. I’ve gotten better with the fear of needles as I’ve gotten older but it’s still pretty intense.

20 Eliza January 16, 2009 at 6:36 am

what a cute plate–love it! your yoga workout sounds super intense. I’ve never really gotten into yoga (probably because I’m quite unflexible and thus bad at it) but I’m thinking I might have to give it another try….

I have a fear of throwing up …its kind of odd, but I have nt thrown up since probably first grade and its just this wierd thing that I’m afraid of haha.

21 Foodie (Fab and Delicious Food) January 16, 2009 at 6:50 am

Congrats to Bobby!

Cute plate!

Haven’t tried that Luna bar flavor, but good to know you liked it! I like the Strawberry Sunrise Luna bar!

22 Andrea (Off Her Cork) January 16, 2009 at 6:54 am

Hooray for Bobby! πŸ˜€

Oh yeah I have phobias but I tend to keep them to meself. :) But your creepy story freaked me out especially the tarantula! Oh my I would have been running for the hills.

23 gina (fitnessista) January 16, 2009 at 7:03 am

congrats to bobby on his new job! that’s wonderful πŸ˜€
everytime i hear about these workouts i get more and more tempted….
as far as phobias go, i’m DEATHLY afraid of medical procedures and needles. i have to have the pilot or a friend go with me everytime i need something done to make sure i don’t start bawling and leave. i’m supposed to get blood work done but i told my friend jeni that unless they send edward cullen in, no one is taking my blood.
blood is another story.. i pass out every time i see it
such a wuss πŸ˜€
hope you have a very happy friday!

24 VeggieGirl January 16, 2009 at 7:11 am

Hell yes for yoga!!!!

**Phobias = arachnophobia and claustrophobia to the EXTREME.

25 marafaye January 16, 2009 at 7:16 am

AAH! Congrats to the boy!!! My fiance has been unemployed since October, so he’s realllllly lucky to have found something!

Rice pudding w/chocolate?? HEAVEN!

26 Beadie January 16, 2009 at 7:34 am

Congrats to Bobby!!

I am realy afraid of fire.

27 Shelby January 16, 2009 at 7:56 am

Congrats for Bobby!!!

I find something “off” about the luna bars too! I think it’s the crispy rice that tastes weird. That flavor is okay though. My little brothers love luna bars haha

I’m afraid of heights, falling, and bugs in general. I’m shivering just think about it too!

28 Sarah January 16, 2009 at 8:04 am

i am PETRIFIED of snakes. sometimes i’ll see a string or shoelace or something on the street, think it’s a snake and scream and run in the other direction. it gets embarrassing at times ; )

i actually HATE the whipped cottage cheese which is so weird because i love regular cc and everyone else seems to like the whipped better. i guess i’m a rebel or something!

29 Rose January 16, 2009 at 8:15 am

Yay Bob Diesel! So glad he found a job! It’s tough these days!

I eat the same exact kind of PB – LOVE IT.

I’m afraid of heights. It’s a weird sort of phobia though that I only notice when I’m on a giant cliff or hiking – or that sort of thing. When I get on rides at amusement parks I’m fine. But I think that’s because I close my eyes until it’s over?

30 dailygoods January 16, 2009 at 8:15 am

love hearing about your X workouts :) Congrats to Bobby! How exciting! that is amazing news. I’d have to say im afraid of deep water… i just don’t like it at all! thats my biggest phobia. gah, i have GOT to try some rice pudding! I need to know how delicious it issss

31 brandi January 16, 2009 at 8:21 am

Congrats on the new job for Bob Diesel :) That’s exciting – I know it’s hard to find one anywhere right now.

– fish or other animals touching me while in the ocean or a lake – yuck

– car accidents. I use my “brake foot” when I’m the passenger all the time because I get so paranoid. I had a best friend and his mom who died in a car wreck, and this didn’t start until after that.

32 runningwithfood January 16, 2009 at 8:43 am

YAY! Congrats Bobby!

So.many.fabulous.eats. Love them all!

Way to go with the Yoga DVD – it’s a long one!

Stay warm!

Oh, spiders get me too. I don’t care how big or small. They’re all the same to me … evil!!!

33 Krista January 16, 2009 at 8:56 am

I am SO with you on spiders. Just typing the word gives me the shivers! My hubby learned long ago that when I call him using a certain “tone” to just come with a kleenex. You couldn’t get me near one for any amount of money! EEEWWW!!!

Sounds as cold there as it is here! Stay warm! :)

34 limberkimbers January 16, 2009 at 9:13 am

Congrats to Bobby on finding a job! And at one of his top choices too! That’s excellent!

I wish we had whipped cottage cheese around here! I was thinking about that this morning when I grabbed my regular stuff for my sweet potato! On the drive in I was pondering if there was a way to ‘whip’ it myself! lol

omg you saw an actual tarantula in the wild? That’s crazy! I’ve always associated them as being people’s pets, it never occured to me that they were wild! haha! My boyfriend would freak he can’t deal with spiders at all! My phobia is worms, earth worms, meal worms, maggots [sorry] they freak me out and I always have nightmares involving them!

35 Kiersten January 16, 2009 at 9:26 am

Congrats to your boyfriend on the new job.

Good job on doing a whole yoga lesson. I want to start doing yoga too, but I keep procrastinating :/

I used to have a HUGE phobia of bugs. All bugs, even the little tiny ones. Over the past year or two though I have gotten less afraid of them. The little ones don’t bother me anymore, and some other common ones (like bees) don’t freak me out as much either. I am still iffy on spiders though.

36 Heather Eats Almond Butter January 16, 2009 at 9:50 am

Lots of feta – NEVER a bad thing.

So glad you enjoyed your yoga. Your session sounded quite intense – way to jump right into it! Plus, I love that you GO to the gym to read your magazines. Awesome. What a great way to get in a little extra movement. I usually head straight for the couch. :)

Your east seemed really well balanced today. I think mini-meals are so good for us, but I can never get into it. I always want big meals – can’t seem to change my mindset.

I am claustrophobic. Airplanes, elevators, no problem, but put me in the backseat of a 2-door car and I will start to hyperventilate!

38 ksgoodeats January 16, 2009 at 10:04 am

Erin comes up with the best nicknames! Congrats to Bob Diesel :) That’s great news!!

That’s probably the only Luna bar that I like – it tastes like an Oreo McFlurry πŸ˜€

As much of a CC fanatic I am, I have never had the whipped kind!

I don’t have any REAL phobias (like shaking, crying, hyperventilating, etc.) but I don’t like heights or snakes – yuck!

PS. I’m so glad my obnoxious LOOOOOOOOOOOSSSSSSSTTTT! is catching on πŸ˜‰

39 Meghann January 16, 2009 at 10:18 am

CONGRATS BOBBY!!!! You’ll have a job too in no time! :)

Umm… phobias? I think its one of those things where I don’t realize I have a phobia until I’m face to face with it and am deathly scared at the moment. I did get made fun of in college becuase I was scared of closed shower curtains. I HATE that you can’t tell whats going on on the other side of the shower. My room mates used to sneak in to my bathroom adn close mine when I was at school and when I came back I woudl freak out. not cool people!

40 HeatherBakes January 16, 2009 at 10:54 am

Congratulations Bobby! That’s such great news! And you’ll have no trouble finding a job either, I’m sure :)

No real phobias, but I get totally freaked out by the idea of someone touching my neck- does that count? It’s weird.

41 Sharon January 16, 2009 at 11:24 am

Congratulations to Bobby! Horray!
And great eats, yum yum yum! I love your pretty spoons!

42 jenitar26 January 16, 2009 at 11:29 am

Go Bobby!!! Woohoo!

I love that kashi cereal. :)

43 Sweet and Fit January 16, 2009 at 11:41 am

congrats to bobby! that whipped cottage cheese almost kinda looks like ricotta. I also have a LOT of trouble with yoga poses, it can be really discouraging sometimes because its soooo much harder than it looks. I have kinda a phobia…i am a total germaphob, I didnt get this way until after I took microbiology in college

44 Danielle January 16, 2009 at 12:27 pm

I’ve never tried cottage cheese, but maybe I would enjoy the whipped variety. I think my phobia is of cottage cheese to be honest lol.
Sounds like that P90X is really tough, good luck with the rest of the 90 days!
And Congrats to Bobby on getting a job! How exciting!

45 Allison January 16, 2009 at 12:32 pm

Yay for Bobby D! πŸ˜›

All your food looks great (I love that cute chocolate chip plate!)

Do you think you could talk to my husband and convince him that I NEED (not want – I NEED) P90X? LOL – he insists I have a gym membership, and therefore, dno’t need it! And I keep coming back at him wiht “But Eeating Bender is doing it and loves it!” :)

46 lauren January 16, 2009 at 2:13 pm

congrats to your boyfriend! i love rice pudding.

and I am going to search for that whipped cottage cheese in whole foods…

47 Melissa S. January 16, 2009 at 4:13 pm

congrats to bobby! that is so great to hear! and i hope you get to find one soon too! whoohoo!

and i’m deathly afraid of ants…i find one, and i go on a rampage to find out where they came from, stuff up the entrance, spray the dickens out of it and clean everything inside from head to toe. one time, i was camping and my tent was accidently placed on an ant hole…w/in a few minutes the whole outside was engulfed while i was on the inside and i started crying to get me out. hahaha.

48 Victoria January 16, 2009 at 7:03 pm

Congrats to Bobby!!! I think getting familiar with the yoga poses always takes a bit of time. I’m sure it’ll make you more confident for next time.

49 Meg January 16, 2009 at 8:43 pm

Sounds like a great workout!

I hate being in elevators!

50 Kelly Turner January 16, 2009 at 9:15 pm

congrats Bobby! its ROUGH out there!

Im scared of outlets. i got electricuted when i was little. they freak me out

51 Karla January 16, 2009 at 9:33 pm

Congratulations Bobby!!! That is so wonderful :) Your job is on the way, I am sure.

Did you read the Jan/Feb Women’s Health today? I did too!

I feel your pain about the cold–I had class from 8am-6:30pm all across campus in the frigid weather. So much fun huh?

At this point, I’m about afraid of the cold weather (and the ice that joins it, I’m a bit of a klutz sometimes!)

52 eatingbender January 16, 2009 at 10:42 pm

Love all the phobias, everyone! I’m glad to know I’m not alone :) And Bobby was SO happy to read all of your comments. You made his day, so of course I love ya for it. Thank you!

53 eatingbender January 16, 2009 at 10:43 pm

Karla ~ I was indeed reading the Jan/Feb issue! We are on the same wavelength, you and I πŸ˜‰

54 Brittany January 17, 2009 at 7:36 am

Okay- I know I am a tad late on this one, but CONGRATS to Bobby. I love that Erin named him Bob Diesel… too funny. Gotta love that girl!

55 bobbi January 17, 2009 at 9:37 pm

congrats BOBBY!!!! I know how it feels:)

56 Erin January 20, 2009 at 1:37 pm

Hahahaha oh my god! I’m so glad you adopted the nickname! HI FIVE BOB DIESEL! That’s amazing! Seriously – I know he is smart, but don’t act like his good looks had nothing to do with it! :) Congratulations!!!
I’m so happy you love yoga. You got some MAYJUH activity in today. I know this was a few days ago but I’m behind. :)
I’m happy to report that I don’t have any phobias! I hate cockroaches and stuff, but I can deal.
