Towering Hunger

It’s Saturday and that means that I don’t have to think about any commitments besides homework. What a relief! I cranked out one of my presentation yesterday afternoon and have another one half way done. Now I just have to write a paper and we’ll be good to go. That just screams “FUN!” doesn’t it?

I can’t complain for too long, though, because I’ve decided to take a break and share my breakfast with you. This morning I woke up around 9:00 and headed to the gym with my roommate. I did 40 minutes on the elliptical before coming back and doing the Legs + Back workout from P90X. I actually just did the “legs” portion which made the workout go by a lot faster. I’m enjoying the fact that now that I know what to expect on the DVDs, I’m able to cater them to what I want to do and I think it’s much more time-effective that way. Every minute and second counts these days!!

After the sweat session, I needed a big breakfast because working out for such a long period of time left me completely exhausted of any energy. In fact, you could say that I had a “towering” hunger. What’s a girl to do?

Answer: Make a waffle tower! Shout out to Miss Sarah, as always, for this one. I combined some new and old flavors and it turned out sensational. Here’s what went in:

  • 2 toasted Kashi GO LEAN! Blueberry frozen waffles
  • 1 tbsp. crunchy Barney Butter
  • 1/4 cup Fage
  • 1/4 cup blueberries
  • 2 tsp. maple syrup

The waffles are stacked one on top of each other, so I split the Barney Butter and Fage up on each layer of waffle, then topped the whole concoction with the blueberries and maple syrup. My mouth is still watering from how delicious this breakfast tasted!

I love making fun breakfasts like this and knowing that they are still completely nutritious. It shows that healthy eating never has to mean sacrificing good taste! Plus, then we have wonders like Coffee Cocoa to wash everything down.

Speaking of ladies who rock the name Sarah, I also have to give a shout out to a woman with a lot of love in her tummy, Sarah of LovIN My Tummy, who tried my Coffee Cocoa here and here. She rocksssss (with 5 s’s, obviously) and her girls are adorable!

I am off to kick some major homework arse. Tonight, Bobby and I are getting in the job celebration we didn’t have last weekend because he was sick. By the way, turns out he had pink eye 😯 YIKES. I am really hoping that I avoid that one!! I will let you all know how McCormick & Schmick’s goes!

P.S. I am making Bobby read Twilight. Call me a demanding girlfriend if you want, but I needed someone else to jump on the bandwagon and thought it’d be fun to see what a guy thinks. I didn’t know if he would like it and told him that if he truly wasn’t interested, he could give the book back to me. Well it turns out he read well over 100 pages last night…muahaha!

  2. ack, pink eye is the worst!! i’m always on guard against it because i work with kids — i had it for 6 weeks once because no medicines were working, yuck. glad bobby is recovered. enjoy your celebration!

  4. That’s so awesome that you’re making Bobby read Twilight! When I was reading the series I’d try to tell my husband about the story line and how good it was, but the one day he said, “Babe, you realize that I don’t care about your vampire book.” 🙁 Oh well, I tried.

  5. hello sweetie! thank you for your input about the egg-poaching and DVDs – i think i will be ordering those egg cups from amazon, and i also love the look of p90x but as a student trying to save up, not sure whether i can justify spending quite a hefty bit of money of them just yet..!! your tower looks so delicious, i just wish so much we had healthy waffles over here. i really want a waffle maker but i think our kitchen may have no space!!

    remember to put your feet up once in a while! and good job on getting bobby into the twilight series, boys just need nudging in the right direction 😉

    Yesssss, I think that most guys would probably like Twilight, I mean they have to be super intelligent and cool to actually get them (obviously Bobby is) so I’m glad you got him to join in the fun! And thanks for all those updates you gave me today, I had no idea about some of them!

  11. hahahah You are a demanding girlfriend! You know your bf’s a keeper when he reads 100+ pages for you. 🙂 But I do think boys secretly like this like…chick flicks and boybands. haha. My boyfriend reads my cosmo while he waits at my apartment all the time.

    Your breakfast really did look delish. HEY! If you like greek yogurt, be sure to pick up those coupon booklets at wholefoods! They have many diff. types of coupons mainly for bars (Luna, Clif Kids, Clif, & Kashi) as well as for Oikos greek yogurt! Just so you know…it’s nice to scale off a couple bucks when you’re a student.

  15. Jenn, your waffle tower looks so good. I almost bought the Kashi Blueberry waffles at Costco this morning, but decided against it. Totally regretting my decision now. 🙁

    One of my guy friends read Twilight. He reads everything and teaches high-school math. I think his female students probably talked him into it. He thought it was an entertaining & easy read, but a bit sappy. I’m anxious to hear Bobby’s review. Good for you. I don’t think I could ever talk Chris into reading it!

  20. There’s nothing like a mighty breakfast to help get the blood sugar stable!!! GREAT IDEA, BENDER! i’ve mixed nut butter together with yogurt before, and if you aren’t careful it can be very tart–but good thing u added the maple syrup for a lil sweetness!! Love it!!!
