PistachiOH NO!

by Jenn (eating bender) on March 31, 2009

FYI: It looks like pistachios are now being recalled. Will salmonella please stop attacking my favorite nuts?! (That’s what she said.)

I’m a little emotionally drained today šŸ˜ I’ll stick to the food, capeesh?

I woke up early this morning and did 30 minutes on the elliptical at the gym, followed by a P90X Core Synergistics workout. Fabulous.

Breakfast was totally ‘fubulus thanks to Miss Erin. I had a tofu coupon this weekend and I used it to by extra firm and silken tofu. I used the silken in my oats this morning!

The only thing I would change about this bowl is that next time, I’m going to try the blended technique. I need me some creaminess instead of the little ‘fu pieces. Other than that, it tasted awesome. Here’s what went in:

  • 1/2 cup quick cooking oats
  • 1/2 cup water
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 sliced banana
  • 1/5 package silken tofu (aka 1 serving)
  • 1 tbsp. Barney Butter (from my contest winnings!)

I put the tofu in near the end of the cooking process. I wanted a hot bowl, so I figured I would let it cook a little, too. I wasn’t really sure what I was doing, but it turned out good and I will definitely blend it next time to make it even better. Thanks for the idea, sistah! I also had some Coffee Cocoa.

After breakfast, I took a nap (ha, waking up early made me sleepy!) for 30 minutes and then got prepared for my first class. I really like my accounting course. The teacher seems very cool – she spent years working for Quaker and at one point was pretty high up at GHIRARDELLI – and I think the information we learn will be very useful. Once class was over, I came back and was ready for lunch.

The theme of today’s lunch was “fries” a la Sarah, who had a fry challenge a while back. I made a ton of fries out of 1 sweet potato, 1 red pepper and 1/2 cucumber. I covered the SP in ketchup.

And had roughly 3 tbsp. cucumber dill hummus for the other veggies.

This left me so full! It’s amazing what water + fiber can do to the tum (in a good way). I wasn’t hungry for anything else, but I was pretty chilly and somewhat not in a good mood, so I made another mug of Coffee Cocoa to drown my sorrows feel better.

The rest of the afternoon is kind of a blur. I had every intention of being productive, but my mood just wasn’t going to let that happen. I ended up taking another nap for 45 minutes. It was just one of those days. The rain sure didn’t help.

My Tuesday afternoon and evening is full of classes, so I wanted to make sure I was fueled. Before I left, I made myself a protein shake using this packet from YouBar that I received a few months back:

I further customized the YouShake by adding 1 cup of unsweetened vanilla almond milk and 5 ice cubes. I blended it all up in the Vita-Mix and came out with this:

It was really tasty. Thanks, YouBar! I’m looking forward to the other mix I still have waiting for me.

To get me through the classes, I also packed a sandwich + string cheese.

The sammie was made with 2 slices of whole wheat bread and 3 tbsp. PB2. It was v. delicious.

I loved my marketing and my photojournalism classes! I am so pumped about this new fancy schmancy camera! First I have to learn how to work it šŸ˜‰ But then I am going to experiment!

Ok, I gave in after class and had another one.

It was just one of those days…

Hoping for the best,

I can’t wait for you to share with us what you learned with your new shmancy camera!

Thanks for the link for the Barney Butter! :)

2 Sharon March 31, 2009 at 8:48 pm

Oh wow, cucumber dill hummus? Aweosme!!!

3 marafaye March 31, 2009 at 8:51 pm

Your eats look fab! I don’t think I could deal with ‘fu in my oats in the a.m. but it is oddly intriguing.
I had Jay Robb in my oat bran this a.m. and I think I liked it! I’m going to try a breakfast cookie with my remaining vanilla whey, then do something else with the chocolate egg white protein packet. I’ll probably end up with chocolate whey though :)

4 runsarah March 31, 2009 at 8:54 pm

I love the idea of the different ‘fries’ for lunch…I need to try that!

5 FoodsThatFit March 31, 2009 at 8:55 pm

Hang in there, I hope tomorrow is a better day.

I really like the idea of adding soft tofu to oats. I bet it would be really creamy if you blended it.

6 Dianna March 31, 2009 at 8:56 pm

Thanks for the Barney Butter link! I’ve been wanting to try it. You rave about it, but it can’t be found where I’m at!

7 Evey March 31, 2009 at 8:58 pm

Omg, Jenn! Thanks for the Barney Butter Link!!

I’m happily waiting for my free sample.. mm!! Can’t wait!

I hope tomorrow is a better day for you, šŸ˜‰

love your fry plate!

11 Alisa - Frugal Foodie March 31, 2009 at 9:32 pm

I absolutely love that bowl! Too cute.

12 Marianne March 31, 2009 at 9:34 pm

Yeah, I can see how little bits of tofu in the oats wouldn’t be the best eats. You could probably just blend the tofu, then stir it into the oats if you didn’t want blended oats as well :)

13 jenngirl March 31, 2009 at 10:07 pm

Aw Jenn, I’m sorry to hear today was a little “off” for you. You know we all have them, and weather totally affects me that way! I hope you feel more like yourself tomorrow!!

And THANK YOU for that BB link! I totally went straight there!! šŸ˜‰

14 Foodie (Fab and Delicious Food) March 31, 2009 at 10:19 pm

Your classes sound so interesting!

15 Caroline March 31, 2009 at 10:28 pm

I was bummed about the pistachio thing too–my mom sent me an urgent e-mail making sure I knew about the recall since she knows how much I love those guys!

I had a “fry” kinda day today too! I had hummus and dippers for lunch as well, and your cucumber dill hummus looks fabulous! Did you make it yourself? I also had some zucchini fries:)

I’d love to try that YouShake–I am desperately low on my protein powder supply!

16 Moran March 31, 2009 at 10:42 pm

I loved your lunch! In Israel (my home country) the produce is so cheap I eat veggies (baked/steamed/raw) ALL DAY LONG! I could live on them! Well, and on porridge!

17 lora March 31, 2009 at 11:02 pm

omfg i am laughing so hard right now…..i had PISTACHIO gelato tonight…i never eat either..hello, im a dumbass LOL

18 Sarah March 31, 2009 at 11:53 pm

Thanks for the shout out!

I’ve had my bag of pistachios in my cupboard for so long, there’s no way they are the dirty nuts. I just wanted to say dirty nuts, since you already used my line. :)

Do you kiss your mother with that mouth? šŸ˜‰

19 coco April 1, 2009 at 3:52 am

24 Erica April 1, 2009 at 5:39 am

Hi Jenn! How are you girl? I cannot believe more nuts are being recalled! Totally crazy….they need to stop with this already šŸ˜‰ GREAT lunch. You’ve totally inspired me to have some sweet potato for lunch. I will have to show you some link lurve. Hope today is less stressful!

25 glidingcalm April 1, 2009 at 5:43 am

that’s what she said. hahahaha. love you

26 Darius T. Williams April 1, 2009 at 5:47 am

I’m loving all the healthy things going on here – and a recall on the nuts…just horrible, right?

27 Marisa (trim the fat) April 1, 2009 at 5:49 am

Mmmm…I have been loving ketchup on my sweet potatoes, too! I may have that for lunch today!

Glad you like your classes!

28 VeggieGirl April 1, 2009 at 5:53 am

I’m so pissed about the pistachio recall – grr!!! :-(

Hooray for YouBar samples!!

29 ksgoodeats April 1, 2009 at 6:23 am

Why can’t companies keep their factories clean?! I’m so over all these recalls ughhh!

Love your tasting plate for lunch BUT I love the PB2 peaking out of the sammy even more šŸ˜‰

Hooray for Barney!!

30 Meghan Telpner April 1, 2009 at 6:31 am

Been hearing so much about this Barney Butter in blog land. Went to see the free sample- but alas… until I get my beach house in California I am not eligible. They don’t send it up to Canada.

31 Betsy April 1, 2009 at 6:36 am

I love everything about this post… especially the mention of your photojournalism class – can’t wait to see how that goes! But about your oatmeal bowl… you need an upgrade! There’s so many Christmas-y oatmeal bowls still floatin’ around the blogosphere… it’s SPRING! :)

32 Alli April 1, 2009 at 6:44 am

hey jenn,

I love your blog. I’ve commented before, but I don’t have a blog. I’ve been wanting to try blending my oats too, because I’ve seen the idea around the blogs. but I can’t seem to find where the blog post that tells you how to do it is.

I saw the post once, but I forgot to bookmark it, and now all I remember is that it had a picture of a hand blender on it and it made you scroll down a lot before it told you the instructions. Do you maybe know what post i’m talking about?

If you do, could you possibly link to it in your next post? Because I might forget to check back here, but I always always read your new posts so I’ll be sure to see it that way :). and I’m betting your other readers would enjoy the link too, since everyone who’s tried blnded oatmeal seems to like it so much.

If you don’t know what I’m talking about, then I’m sorry to bug you! It’s just that I’ve been looking for this mysterious post for a while now. So I’m crossing my fingers that you know what I’m talking about and don’t just think I’m a crazy blog fan!

33 girlrunningaround April 1, 2009 at 6:51 am

emotionally drained is so much worse than physically drained!! we definitely need a phone date soon! Are you free tonight?

I’m so glad that you like your accounting class—I’m taking one now too and I LOVE IT! I have an exam in it tomorrow though which I don’t love so much, haha.

Hope you have a great day!

36 brandi April 1, 2009 at 7:19 am

I hope today is better! I like getting the rain, but it never helps my mood either.

Thanks for the BB link! I’ve never tried it, so I’m excited :)

37 shelby April 1, 2009 at 7:26 am

I’M SO MAD about the recall!!! WTF?!?!

Blend the tofu in the oats next time, it creates much more volume and creamy texture…I love it =)

38 Chocolate Covered Katie April 1, 2009 at 7:54 am

Ooh yes! Definitely use the blending technique! The resulting creaminess is insane!

Gosh, I am such a nerd…

39 raspberryrunner April 1, 2009 at 8:36 am

I almost bought a bag of Pistachios on Sunday, so glad I didn’t now! Sorry to hear your day is going badly, I hope this one goes better. Love that you’re still rocking the Christmas dish though, I have one on my blog I just used too lol. They’re so cute it’s hard to let go! I need some springtime flowery dishes I spose.

51 bobbi April 1, 2009 at 11:43 am

booo on the recall!!! Everytime I see that Jolly bowl on your blog it makes my heart smile:) Have a beautiful day Jen!

52 Heather Eats Almond Butter April 1, 2009 at 12:37 pm

Sorry you were feeling kind of down yesterday. :( I hope the sun is shining in your neck of the woods today my friend!

How exciting that your teacher used to work at Quaker. Can she get me a robe?!? :)

Tofu chunkies in oatmeal – don’t think I could do it. But I must say it looks a lot more appetizing than my oats did this morning. Hehe.

Seriously, hope your Wednesday is going great. Have fun playing with your new camera, and your “That’s what she said” line was brilliant. :)

53 Danielle April 1, 2009 at 1:40 pm

That fry lunch looks really good, I bet it was fun to eat!

And thanks for your super sweet comment on my blog, it definitely made me smile :)

I am loving all your “fries!”

Thanks for the Barney Butter link.

Looks like a yummy day!

I saw an infomercial for the P90X while I was at the gym the other day :) Looks really interesting – and tough! Do you follow the whole program or just use the workouts randomly?
