‘Pump’ It Up Muffins

At first I was going to make mini muffins to have as a snack option. In the end, however, I decided to go all the way and make six big muffins that I can have for breakfast options instead! I’ve dubbed them “Pump” It Up Muffins – thanks to the extra “power” provided by oats and flax. I hope that’s a somewhat original name!

Here’s what I used:

  • 1 cup old fashioned oats
  • 1 cup whole wheat flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup applesauce
  • 1 15 oz. can pumpkin
  • 1 tbsp. ground flax seed
  • 1 tbsp. brown sugar
  • 1 tbsp. chocolate chips (divided evenly)
  • Cinnamon to taste

Combine ingredients in a bowl (leave out the chocolate chips at first). Grease a muffin pan with cooking spray and evenly distribute the muffin mix into each cup. Stick chocolate chips on top. Bake at 375* for 25 to 30 minutes.

So they look super scrumptious and all, but my favorite part about pumpkin pie is the crust. I thought to myself, what could I use to mimic the crust and still be somewhat light and healthy?

Two words: TEDDY GRAHAMS!!!!!!

A perfect imitation of a graham cracker crust. Plus, they’re adorable! :mrgreen:

Each muffin has 180 calories and 7 grams of fiber!

  5. thank you thank you for this base! I just made a batch, with some random substitutions based on a lack of ingredients! This sounds like a lot of subs, but your recipe was actually an amazing base

    here’s what I did — (no pumpkin, added a banana and a chopped apple, replaced applesauce with yogurt, had no flour so I used 1c. oats and 1/2 c. fiber one (didn’t need the extra 1/2 cup oats to make up for the 1 c. flour, threw in some raisins, a splash of maple syrup, a splash of milk, and of course lots of cinn), and I have 9 pretty huge looking muffins ready to bake tommorow morning sitting in my fridge!

    I made these muffins a few weeks ago before a trip, for a healthy, filling snack for the plane.

    The only change I made was using spelt flour instead of whole wheat and I added a tbsp of butterscotch chips on top of the chocolate and mixed half of both chips into the batter.

    They turned out really, really great. I loved how dense and moist they were and although mine turned out a little flat (probably b/c of the spelt) they were still awesome. Thanks for the recipe, I’ll be making these again for sure.

  7. I made these and LOVED them- I omitted the grahams (can’t get them here πŸ™ ) and chocolate chips, but they turned out great! I also used an apple pear puree (all I could get). Oh, and subbed the flax- one batch, I used 1 egg, and the second batch used 2 egg whites. Couldn’t tell the difference but will use a whole egg from now on… I feel bad throwing away yolks!

  8. I would love to make these but I do not have any flax in the house. Can I use anything else? Maybe just skip it all together?

  9. I’ll definitely be making these soon, though I may try subbing greek yogurt for the applesauce. Think that’ll work? I love the teddy grams — super cute. Too bad I’ll be biting their heads off…

    • I think Greek yogurt could definitely work! It might be a little more tangy and a little less sweet, but worth a try for sure. πŸ™‚ The teddy grams are my favorite part, though it is too bad they are too delicious not to bite their heads off…
