Weekend, Wedding + Workout {Video}

What a whirlwind weekend! Tonight (Tuesday) is honestly the first chance I’ve had to sit down and write. I’m not complaining though – it was fabulous. Last Thursday, Bobby and I drove up to Minnesota for a wedding. A fact you may not know about me is that although I love Arizona, I actually grew up in Minnesota and spent 12 years of my life there. It’s where I went to grade school, where I truly have called home the longest and where I met Bobby.

This weekend’s wedding was for Bobby’s cousin, who also happens to have played on my golf team in high school. Her mom is also good friends with mine, so my family was in town for the occasion, too!

The ceremony was absolutely beautiful. It took place at Our Lady of Lourdes in downtown Minneapolis. The bridesmaids wore a stunning wine shade of purple – and the bride looked gorgeous!

After the ceremony, we headed to Nicollet Island Pavilion for the reception. The setting was absolutely picturesque – shades of pink, purple and ivory. We started with a cocktail hour outside, complete with a photo shoot πŸ™‚

Then we headed indoors for dinner, which was accompanied by some very touching speeches from the wedding party. Look at the gorgeous handmade menu!

The first course was a mixed greens salad with pear, walnuts, stilton and champagne vinaigrette.

It was delicious! I’m a big fan of blue cheese and walnuts in a salad.

For dinner, I chose the chicken roulade with spinach, asiago, pine nuts and port mustard cream sauce.

This was incredible – the sauce was creamy and rich, but not too much so. The roulade stuffing of spinach, asiago and pine nuts created an intense burst of flavor and complemented perfectly with the asparagus and mashed potatoes served on the side. I enjoyed every mouthwatering bite.

Of course, there was still room for wedding cake! There were two varieties: chocolate and a vanilla with a rich layer of jam in the middle. I chose the latter and was not disappointed. It was amazing!

The rest of the night was filled with dancing. The reception included a live band that was very talented! It was so nice to see some Minnesota friends and many of Bobby’s family members. Seeing my own family was also an added bonus πŸ™‚

We spent the rest of the weekend catching up with more old friends. Then on Sunday, I was honored to be thrown my very first wedding shower by Bobby’s side of the family. The shower was held at Bobby’s aunt’s house and it was spectacular – complete with mimosas, good food and good company.

I will definitely share more “people pictures” as soon as I have them! For now, I hope you enjoy my foodie perspective of the beautiful shower πŸ™‚ The entire spread was phenomenal!

I took a little bit of everything. Clockwise from the top: cheese and spinach quiche, fruit kabob, spinach salad with strawberries, mandarin oranges, scallions and pine nuts, and a cinnamon-pecan bun.

For dessert, I sampled a chocolate mousse-filled tartlet. And by sampled I mean devoured πŸ˜‰

All of the gifts we received were so wonderful. We are rapidly filling up our kitchen with some amazing new toys – and I can’t thank Bobby’s family enough for putting together such a wonderful shower.

The weekend went by in a flash, but there was plenty of fun to be had!

Insanity: Week One

As promised, I wanted to check in through video following week one of Insanity. This workout has definitely lived up to the expectations thus far – and I’m loving it! I wrapped up day two, week two tonight and thought what better time to record a video than when I’m disgustingly sweaty? Ignore the shiny face and frizzy hair and focus on the cheesy chica chatting instead πŸ˜‰

  1. Hooray for such a fun weekend. It looks as though the wedding and your first bridal shower went really well! And, of course, the food at both looks delish.

    I love that you did your insanity week 1 review video while you were still sweaty from a the workout session. As well as reading/watching your insanity reviews, I’ve been going back through and reading your P90x reviews – I watched an infomercial at the gym and now I’m hooked. πŸ™‚

  7. Now I really want to try Inanity! The most appealing thing to me is that it is short and really seems to pack in a lot in a small amount of time. It seems like I would be more motivated to do it knowing that it is 30-40 minutes long. An hour can be too much sometimes! Love the video. πŸ™‚

  11. Sounds like you had a great bridal shower. Enjoy the celebration and planning… it goes by so fast! We are about to celebrate our 2 year anniversary and it feels like just yesterday I was going into my first bridal shower. Congrats!
